Description

Ingredients

  • 4 bone-in chicken thighs
  • 2 apples, cored and sliced
  • 1 cup fresh or frozen cranberries
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken thighs with olive oil, thyme, salt, and pepper.
  3. Arrange the chicken in a single layer in a roasting pan.
  4. Scatter the apple slices and cranberries around the chicken.
  5. Pour the chicken broth into the pan.
  6. Roast for 40 to 45 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the apples are tender.
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • You can use bone-in chicken breasts instead of thighs.
  • Adjust the cooking time if using different cuts of chicken.
