Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken thighs with olive oil, thyme, salt, and pepper.
- Arrange the chicken in a single layer in a roasting pan.
- Scatter the apple slices and cranberries around the chicken.
- Pour the chicken broth into the pan.
- Roast for 40 to 45 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the apples are tender.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- You can use bone-in chicken breasts instead of thighs.
- Adjust the cooking time if using different cuts of chicken.
