- For the crumble: 1/4 cup all-purpose flour
- 1/4 cup rolled oats
- 2 tablespoons brown sugar
- 2 tablespoons cold butter, cubed
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
- In a separate bowl, mix milk, oil, egg, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Fold in the diced apple.
- Divide the batter evenly among the muffin cups.
- Make the crumble: In a small bowl, combine flour, oats, and brown sugar. Cut in cold butter with a fork until mixture resembles coarse crumbs.
- Sprinkle crumble over each muffin.
- Bake for 18 to 20 minutes, until a toothpick inserted in center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Use a firm apple variety like Granny Smith or Honeycrisp for best texture.
- You can substitute whole wheat flour for half the all-purpose flour.
