A cupcake filled with apple pie filling, topped with cinnamon frosting.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup apple pie filling (canned or homemade)
- For frosting: 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and buttermilk to the butter mixture, starting and ending with dry. Mix until just combined.
- Spoon a tablespoon of batter into each liner. Add a teaspoon of apple pie filling in the center. Top with another tablespoon of batter to cover.
- Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
- For frosting, beat butter, powdered sugar, cinnamon, and milk until smooth. Frost cooled cupcakes.
Notes
- You can use store-bought apple pie filling or make your own with diced apples, sugar, and cinnamon.
- For a stronger apple flavor, add 1/2 teaspoon apple pie spice to the batter.
