Description
A classic blueberry cobbler with a sweet, juicy filling and a tender biscuit topping.
Ingredients

- 4 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup milk
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix blueberries, sugar, lemon juice, and cornstarch. Pour into a baking dish.
- In another bowl, whisk flour, sugar, baking powder, and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in milk until just combined.
- Drop spoonfuls of dough over blueberries.
- Bake for 35-40 minutes until golden and bubbly.
- Cool slightly before serving.
Notes
- Use frozen blueberries if fresh are not available.
- Serve warm with vanilla ice cream.
- Store leftovers in the fridge for up to 3 days.
