Description

Ingredients

  • 1 cup cornmeal
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/3 cup melted butter
  • 2 large eggs
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 400°F. Grease a 9-inch square baking pan.
  2. In a large bowl, whisk together flour, cornmeal, sugar, baking powder, and salt.
  3. In a separate bowl, mix buttermilk, melted butter, and eggs.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared pan. Spread evenly.
  7. Bake for 20 to 25 minutes, until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes. Serve warm.

Notes

  • You can use frozen blueberries without thawing. Add them directly to the batter.
  • For a less sweet cornbread, reduce sugar to 1/4 cup.
