Description

These brown butter pumpkin blondies are chewy and full of fall flavor. Brown butter adds a warm nutty taste. Pumpkin makes them moist.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup white chocolate chips

Instructions

  1. Brown the butter in a saucepan over medium heat. Cook until it turns golden and smells nutty. Remove from heat and let cool.
  2. Preheat oven to 350°F. Line an 8×8 inch pan with parchment paper.
  3. In a bowl, mix the browned butter, pumpkin puree, brown sugar, egg, and vanilla.
  4. In another bowl, whisk flour, baking powder, salt, and pumpkin pie spice.
  5. Combine wet and dry ingredients. Fold in white chocolate chips.
  6. Pour batter into the pan. Spread evenly.
  7. Bake for 25 minutes or until a toothpick comes out clean. Cool before cutting.
