Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1/3 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons melted butter or olive oil
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 cup crumbled blue cheese (optional)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub sweet potatoes and pierce them with a fork. Bake for 45 minutes or until tender.
  3. While potatoes bake, combine shredded chicken, buffalo sauce, and melted butter in a bowl. Mix well.
  4. When potatoes are cool enough to handle, slice them lengthwise and fluff the insides with a fork.
  5. Fill each potato with the buffalo chicken mixture.
  6. Top with a dollop of Greek yogurt and crumbled blue cheese if using.
  7. Garnish with green onions. Serve immediately.
