- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1/3 cup buffalo hot sauce (e.g., Frank’s RedHot)
- 2 tablespoons melted butter or olive oil
- 1/2 cup plain Greek yogurt or sour cream
- 1/2 cup crumbled blue cheese (optional)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub sweet potatoes and pierce them with a fork. Bake for 45 minutes or until tender.
- While potatoes bake, combine shredded chicken, buffalo sauce, and melted butter in a bowl. Mix well.
- When potatoes are cool enough to handle, slice them lengthwise and fluff the insides with a fork.
- Fill each potato with the buffalo chicken mixture.
- Top with a dollop of Greek yogurt and crumbled blue cheese if using.
- Garnish with green onions. Serve immediately.

- You can use rotisserie chicken for convenience.
- Adjust hot sauce amount to your spice preference.
- For a dairy-free option, skip the yogurt and blue cheese.
