Description
A twist on classic Caesar salad with roasted delicata squash croutons.
Ingredients

- 1 delicata squash, seeded and sliced into half-moons
- 2 tablespoons olive oil
- 1 head romaine lettuce, chopped
- 1/2 cup shaved Parmesan cheese
- 1/4 cup Caesar dressing (store-bought or homemade)
- 1/2 cup croutons (optional, omit for gluten-free)
Instructions
- Preheat oven to 400°F (200°C). Toss squash slices with olive oil and spread on a baking sheet. Roast for 20-25 minutes until tender and golden.
- While squash roasts, wash and chop romaine lettuce. Place in a large bowl.
- Drizzle Caesar dressing over lettuce and toss to coat.
- Top with roasted squash, shaved Parmesan, and croutons if using. Serve immediately.
Notes
- Delicata squash skin is edible. No need to peel.
- For a lighter dressing, use Greek yogurt-based Caesar.
