- 4 slices of bread (sourdough or your choice)
- 2 tablespoons butter, softened
- 1/2 cup pumpkin puree
- 1 cup shredded sharp cheddar cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon ground nutmeg
Instructions
- In a small bowl, mix pumpkin puree, salt, pepper, and nutmeg.
- Spread butter on one side of each bread slice.
- Place two slices buttered side down on a skillet or griddle over medium heat.
- Spread pumpkin mixture on the unbuttered side of each slice.
- Top with shredded cheddar cheese.
- Place remaining bread slices on top, buttered side up.
- Cook for 3-4 minutes until golden brown, then flip and cook another 3-4 minutes until cheese melts.
- Remove from heat, let cool slightly, then slice and serve.
Notes
- Use a dense bread like sourdough for best texture.
- Add a pinch of cayenne for heat.
- You can substitute gruyere or mozzarella for cheddar.
