Creamy scalloped sweet potatoes with chipotle and gouda cheese. A spicy and savory side dish.

- 3 large sweet potatoes, peeled and thinly sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup heavy cream
- 1 chipotle pepper in adobo sauce, minced
- 1 teaspoon adobo sauce
- 1 cup shredded gouda cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F.
- Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Slowly whisk in milk and cream. Bring to a simmer, stirring constantly, until thickened.
- Stir in chipotle pepper, adobo sauce, gouda cheese, salt, and pepper. Remove from heat.
- Layer half the sweet potato slices in a greased baking dish. Pour half the sauce over them.
- Add remaining sweet potato slices and pour remaining sauce on top.
- Cover with foil and bake for 40 minutes. Remove foil and bake for 20 more minutes until bubbly and golden.
- Let cool for 5 minutes before serving.
Notes
- Use a mandoline for even slices.
- Adjust chipotle amount to your heat preference.
