Description

Creamy scalloped sweet potatoes with chipotle and gouda cheese. A spicy and savory side dish.


Ingredients

Scale
  • 3 large sweet potatoes, peeled and thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup heavy cream
  • 1 chipotle pepper in adobo sauce, minced
  • 1 teaspoon adobo sauce
  • 1 cup shredded gouda cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F.
  2. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
  3. Slowly whisk in milk and cream. Bring to a simmer, stirring constantly, until thickened.
  4. Stir in chipotle pepper, adobo sauce, gouda cheese, salt, and pepper. Remove from heat.
  5. Layer half the sweet potato slices in a greased baking dish. Pour half the sauce over them.
  6. Add remaining sweet potato slices and pour remaining sauce on top.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake for 20 more minutes until bubbly and golden.
  8. Let cool for 5 minutes before serving.

  • Use a mandoline for even slices.
  • Adjust chipotle amount to your heat preference.
