Crunchy quinoa bars coated in dark chocolate. A simple snack with protein and fiber. Perfect for a quick energy boost.
Ingredients

- 1 cup quinoa, rinsed and drained
- 1/2 cup creamy peanut butter or almond butter
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips (vegan)
- 1 tablespoon coconut oil
Instructions
- Toast quinoa in a dry skillet over medium heat for 5 minutes, stirring often. Set aside to cool.
- In a bowl, mix peanut butter, maple syrup, and vanilla until smooth.
- Stir in cooled quinoa until well coated.
- Press mixture into a lined 8×8 inch pan. Chill for 30 minutes.
- Melt chocolate chips and coconut oil in a microwave or double boiler.
- Spread melted chocolate over the chilled quinoa mixture.
- Refrigerate for 20 minutes until chocolate sets.
- Cut into bars and serve.
Notes
- Store bars in an airtight container in the fridge for up to a week.
- Use any nut or seed butter you prefer.
- For extra crunch, add 1/4 cup chopped nuts.
