Description

Crunchy quinoa bars coated in dark chocolate. A simple snack with protein and fiber. Perfect for a quick energy boost.


Ingredients

Scale
  • 1 cup quinoa, rinsed and drained
  • 1/2 cup creamy peanut butter or almond butter
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips (vegan)
  • 1 tablespoon coconut oil

Instructions

  1. Toast quinoa in a dry skillet over medium heat for 5 minutes, stirring often. Set aside to cool.
  2. In a bowl, mix peanut butter, maple syrup, and vanilla until smooth.
  3. Stir in cooled quinoa until well coated.
  4. Press mixture into a lined 8×8 inch pan. Chill for 30 minutes.
  5. Melt chocolate chips and coconut oil in a microwave or double boiler.
  6. Spread melted chocolate over the chilled quinoa mixture.
  7. Refrigerate for 20 minutes until chocolate sets.
  8. Cut into bars and serve.

Notes

  • Store bars in an airtight container in the fridge for up to a week.
  • Use any nut or seed butter you prefer.
  • For extra crunch, add 1/4 cup chopped nuts.
