- 4 pita breads or flatbreads

- 1/2 cucumber, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons lemon juice
- 2 tablespoons plain Greek yogurt
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
- Grill or pan-sear the chicken over medium-high heat for 6 to 7 minutes per side until fully cooked.
- Let the chicken rest for 5 minutes, then chop into small pieces.
- In a bowl, combine the chopped chicken with tomatoes, cucumber, red onion, olives, and feta cheese.
- Mix lemon juice, Greek yogurt, and parsley to make a simple dressing.
- Pour the dressing over the chicken mixture and stir well.
- Warm the pita breads in a dry skillet or oven.
- Divide the chicken salad among the pitas and serve.
