Ingredients

- 2 lbs potatoes, peeled and cubed
- 1 cup mayonnaise
- 2 tbsp mustard
- 1/2 cup chopped celery
- 1/4 cup chopped red onion
- 2 hard-boiled eggs, chopped
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Boil potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
- In a large bowl, mix mayonnaise, mustard, salt, and pepper.
- Add cooled potatoes, celery, red onion, and eggs to the bowl.
- Gently toss until all ingredients are coated.
- Refrigerate for at least 1 hour before serving.
Notes
- For extra flavor, add chopped pickles or fresh herbs.
- Use Yukon Gold potatoes for creamier texture.
