Description

Cookie butter and caramel swirl into a creamy cheesecake on a crunchy cookie crust. These bars are rich, sweet, and easy to make.


Ingredients

  • 1 1/2 cups crushed cookie butter cookies (like Biscoff)
  • 1/4 cup melted unsalted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup cookie butter (creamy)
  • 1/2 cup caramel sauce

Instructions

  1. Preheat oven to 325°F. Line an 8×8 inch pan with parchment paper.
  2. Mix crushed cookies and melted butter. Press firmly into the pan. Bake for 10 minutes. Let cool.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Mix in cookie butter until combined.
  4. Pour filling over crust. Drop spoonfuls of caramel on top. Swirl with a knife.
  5. Bake for 35-40 minutes until edges are set but center jiggles slightly.
  6. Cool completely at room temperature, then refrigerate for at least 2 hours. Cut into bars.

  • Use room temperature cream cheese for a smooth filling.
  • Chill thoroughly before cutting for clean slices.
