Description
Cookie butter and caramel swirl into a creamy cheesecake on a crunchy cookie crust. These bars are rich, sweet, and easy to make.

- 1 1/2 cups crushed cookie butter cookies (like Biscoff)
- 1/4 cup melted unsalted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup cookie butter (creamy)
- 1/2 cup caramel sauce
Instructions
- Preheat oven to 325°F. Line an 8×8 inch pan with parchment paper.
- Mix crushed cookies and melted butter. Press firmly into the pan. Bake for 10 minutes. Let cool.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Mix in cookie butter until combined.
- Pour filling over crust. Drop spoonfuls of caramel on top. Swirl with a knife.
- Bake for 35-40 minutes until edges are set but center jiggles slightly.
- Cool completely at room temperature, then refrigerate for at least 2 hours. Cut into bars.
Notes
- Use room temperature cream cheese for a smooth filling.
- Chill thoroughly before cutting for clean slices.
- Store leftovers in the fridge for up to 5 days.
