Description
This salad combines sweet apples, tart cranberries, and fluffy quinoa. It is a fresh and filling dish. You can serve it as a side or a light meal.

- 1 cup quinoa
- 2 cups water
- 1 large apple, diced
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tablespoons maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and water in a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes. Fluff with a fork.
- Let quinoa cool to room temperature.
- In a large bowl, mix cooled quinoa, apple, cranberries, and walnuts.
- In a small bowl, whisk maple syrup, vinegar, oil, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Serve immediately or refrigerate for later.
Notes
- You can use pecans or almonds instead of walnuts.
- Add chopped fresh parsley for extra color.
