Description

This salad combines sweet apples, tart cranberries, and fluffy quinoa. It is a fresh and filling dish. You can serve it as a side or a light meal.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 large apple, diced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water.
  2. Combine quinoa and water in a pot. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let sit for 5 minutes. Fluff with a fork.
  5. Let quinoa cool to room temperature.
  6. In a large bowl, mix cooled quinoa, apple, cranberries, and walnuts.
  7. In a small bowl, whisk maple syrup, vinegar, oil, salt, and pepper.
  8. Pour dressing over salad and toss to combine.
  9. Serve immediately or refrigerate for later.

Notes

  • You can use pecans or almonds instead of walnuts.
  • Add chopped fresh parsley for extra color.
