Description

These cranberry crumble bars have a buttery crust, tart cranberry filling, and a crunchy oat topping.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup cold butter, cubed
  • 1 cup rolled oats
  • 1/2 teaspoon salt
  • 3 cups fresh or frozen cranberries
  • 1/2 cup granulated sugar (for filling)
  • 1/4 cup orange juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, mix flour, 1 cup sugar, oats, and salt. Cut in cold butter until the mixture is crumbly.
  3. Press half of the crumb mixture evenly into the bottom of the prepared pan.
  4. In a saucepan, combine cranberries, 1/2 cup sugar, orange juice, and cornstarch. Cook over medium heat, stirring, until thickened and bubbly. Remove from heat and stir in vanilla.
  5. Spread the cranberry filling over the crust.
  6. Sprinkle the remaining crumb mixture over the filling.
  7. Bake for 40 minutes, until the top is golden brown and the filling is bubbly.
  8. Cool completely in the pan before cutting into bars.
