Description
These cranberry crumble bars have a buttery crust, tart cranberry filling, and a crunchy oat topping.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup cold butter, cubed
- 1 cup rolled oats
- 1/2 teaspoon salt
- 3 cups fresh or frozen cranberries
- 1/2 cup granulated sugar (for filling)
- 1/4 cup orange juice
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
- In a large bowl, mix flour, 1 cup sugar, oats, and salt. Cut in cold butter until the mixture is crumbly.
- Press half of the crumb mixture evenly into the bottom of the prepared pan.
- In a saucepan, combine cranberries, 1/2 cup sugar, orange juice, and cornstarch. Cook over medium heat, stirring, until thickened and bubbly. Remove from heat and stir in vanilla.
- Spread the cranberry filling over the crust.
- Sprinkle the remaining crumb mixture over the filling.
- Bake for 40 minutes, until the top is golden brown and the filling is bubbly.
- Cool completely in the pan before cutting into bars.
Notes
- Use frozen cranberries straight from the freezer without thawing.
- Let the bars cool fully for clean, neat cuts.
- Store in an airtight container at room temperature for up to 3 days.
