Description
These cranberry crumble cheesecake bars combine a buttery crust, a creamy cheesecake layer, and a tart cranberry topping with a crunchy crumble.

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup cold butter, cubed
- 2 cups fresh or frozen cranberries
- 1/4 cup orange juice
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Line a 9×13 inch pan with parchment paper.
- Mix flour and 1/2 cup sugar. Cut in butter until crumbly. Press half into pan. Bake 15 minutes.
- In a saucepan, combine cranberries, orange juice, and 1/4 cup sugar. Cook until cranberries burst. Set aside.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs and vanilla. Mix well.
- Pour cream cheese mixture over crust. Spoon cranberry mixture on top. Sprinkle remaining crumb mixture over.
- Bake 35-40 minutes until set. Cool completely. Refrigerate 2 hours before slicing.
Notes
- Use fresh or frozen cranberries.
- Chill bars before cutting for clean slices.
- Store in refrigerator up to 5 days.
