Description

Combine cream cheese, cheddar, dried cranberries, and walnuts. Shape into a log and chill. Serve with crackers.


Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup walnuts, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup fresh parsley, chopped (for coating)

Instructions

  1. In a bowl, mix cream cheese, cheddar, cranberries, walnuts, garlic powder, and salt until combined.
  2. Transfer mixture onto plastic wrap. Shape into a log about 6 inches long.
  3. Wrap tightly and refrigerate for at least 2 hours until firm.
  4. Spread parsley on a plate. Roll the chilled log in parsley to coat evenly.
  5. Serve with crackers or sliced baguette.

Notes

  • You can use pecans instead of walnuts.
  • For a sweeter log, add 1 tablespoon honey.
