Description

A creamy and comforting one-pot pasta dish with sweet butternut squash and savory Parmesan cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 small butternut squash, peeled and cubed (about 3 cups)
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until soft, about 3 minutes.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in butternut squash and orzo. Cook for 1 minute, stirring constantly.
  4. Pour in vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer until squash is tender and orzo is cooked, about 15 minutes.
  5. Remove from heat. Stir in heavy cream and Parmesan cheese until creamy and combined.
  6. Season with salt and pepper. Serve hot, garnished with fresh parsley.

Notes

  • You can substitute heavy cream with half-and-half for a lighter version.
  • Add a pinch of nutmeg for extra warmth.
