- 1/2 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 tablespoon instant espresso powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F. Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, whisk melted butter and brown sugar until smooth.
- Whisk in egg and vanilla extract.
- In a separate bowl, whisk flour, cinnamon, ginger, cardamom, cloves, nutmeg, espresso powder, baking powder, and salt.
- Add dry ingredients to wet ingredients. Stir until just combined.
- Spread batter evenly into prepared pan.
- Bake for 20 to 25 minutes, until edges are set and a toothpick in center comes out with a few moist crumbs.
- Cool completely in pan on a wire rack before cutting into squares.
Notes
- You can substitute 2 tablespoons of strong brewed coffee for the espresso powder, but reduce butter by 1 tablespoon.
- For a stronger chai flavor, add 1/4 teaspoon freshly grated nutmeg.
- Store blondies in an airtight container at room temperature up to 3 days.
