A simple and delicious blueberry crisp with a crunchy oat topping.
Ingredients

- 4 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup unsalted butter (cold, cubed)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix blueberries, granulated sugar, lemon juice, and cornstarch. Pour into a baking dish.
- In another bowl, combine oats, flour, brown sugar, salt, and cinnamon. Cut in butter until crumbly.
- Sprinkle the oat mixture over the blueberries.
- Bake for 30-35 minutes until golden and bubbling.
- Let cool slightly before serving.
Notes
- Use frozen blueberries if fresh are unavailable.
- Serve warm with vanilla ice cream.
- Store leftovers in the fridge for up to 3 days.
