Ingredients

Scale
  • 2 large eggplants, sliced into 1/2-inch rounds
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup olive oil

  2. Season eggplant slices with salt and pepper.
  3. Dip each slice in beaten eggs, then coat with breadcrumbs mixed with Parmesan.
  4. Heat olive oil in a skillet over medium heat. Cook eggplant slices until golden brown on both sides.
  5. Layer eggplant, marinara sauce, and mozzarella cheese in a baking dish. Repeat layers.
  6. Bake for 25 minutes, until cheese is melted and bubbly.
  7. Let it cool for 5 minutes before serving.

Notes

  • For a crispier texture, use panko breadcrumbs.
