- 1 cup breadcrumbs

- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F.
- Season eggplant slices with salt and pepper.
- Dip each slice in beaten eggs, then coat with breadcrumbs mixed with Parmesan.
- Heat olive oil in a skillet over medium heat. Cook eggplant slices until golden brown on both sides.
- Layer eggplant, marinara sauce, and mozzarella cheese in a baking dish. Repeat layers.
- Bake for 25 minutes, until cheese is melted and bubbly.
- Let it cool for 5 minutes before serving.

- For a crispier texture, use panko breadcrumbs.
