Description

Tender beef chuck roast braised in a rich onion broth, topped with melted cheese.


Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 4 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup dry red wine
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 cup shredded Gruyere or Swiss cheese

Instructions

  1. Preheat oven to 325°F.
  2. Season beef roast with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat.
  4. Sear roast on all sides until browned, about 4 minutes per side. Remove and set aside.
  5. Reduce heat to medium. Add sliced onions and cook, stirring occasionally, until deeply caramelized, about 25 minutes.
  6. Add garlic and cook for 1 minute.
  7. Pour in red wine, scraping up browned bits from the bottom. Simmer until reduced by half, about 3 minutes.
  8. Return roast to the pot. Add beef broth, Worcestershire sauce, thyme, and bay leaves. Bring to a simmer.
  9. Cover and transfer to the oven. Braise for 2.5 to 3 hours, until meat is fork-tender.
  10. Remove roast and let rest. Discard thyme and bay leaves.
  11. Skim excess fat from the cooking liquid. Place pot on stovetop over medium heat. Whisk in cornstarch slurry and simmer until thickened, about 2 minutes.
  12. Slice or shred the beef. Return to the pot with the gravy.
  13. Serve in bowls, topped with shredded cheese. Broil until bubbly and golden, about 2 minutes.

  • Use a heavy Dutch oven for even heat.
  • Slice onions uniformly for even caramelization.
  • Let the roast rest before slicing to retain juices.
