French Onion Soup Perfect 30-Minute Caramelization

Description

A rich and savory soup made with caramelized onions, beef broth, and melted Gruyère cheese on toasted bread.


Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 French baguette, sliced into 1-inch thick pieces
  • 2 cups shredded Gruyère cheese

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add sliced onions. Cook, stirring often, until deeply caramelized, about 30 minutes.
  3. Pour in beef broth. Add thyme, bay leaf, salt, and pepper. Bring to a simmer.
  4. Cook for 15 minutes. Remove bay leaf.
  5. Preheat broiler. Place baguette slices on a baking sheet. Toast under broiler until golden, about 1 minute per side.
  6. Ladle soup into oven-safe bowls. Top each with a toasted baguette slice and generous amount of Gruyère.
  7. Broil until cheese is bubbly and golden, about 2 minutes. Serve hot.

  • Use vegetable broth for a vegetarian version.
  • Caramelizing onions slowly develops deep flavor. Do not rush.
  • You can substitute Gruyère with Swiss or mozzarella.
