Description
Crispy on the outside, soft inside. These fried mashed potato balls make a great snack or side dish.

- 2 cups cold mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 large egg, beaten
- 1/2 cup all-purpose flour
- 1 cup breadcrumbs
- Oil for frying
- Salt and pepper to taste
Instructions
- Mix mashed potatoes, cheese, green onions, salt, and pepper in a bowl.
- Shape mixture into 1-inch balls.
- Dip each ball in flour, then in beaten egg, then in breadcrumbs.
- Heat oil in a deep pan to 350°F (175°C).
- Fry balls in batches until golden brown, about 3-4 minutes.
- Drain on paper towels. Serve warm.
Notes
- Use cold mashed potatoes for easier shaping.
- You can bake balls at 400°F for 15 minutes instead of frying.
- Add your favorite herbs or spices for extra flavor.
