Description
A no-bake dessert with layers of spiced gingersnap cookies and sweet apple filling, chilled to perfection.
Ingredients

- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 cups diced apples (peeled and cored)
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 24 gingersnap cookies
Instructions
- In a bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Set aside.
- In a saucepan, combine apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 10 minutes, stirring occasionally. Let cool completely.
- Line an 8×8 dish with a layer of gingersnap cookies. Spread half of the apple mixture over the cookies. Spread half of the whipped cream over the apples.
- Repeat layers: remaining cookies, remaining apples, and remaining whipped cream.
- Cover and refrigerate for at least 6 hours or overnight.
- Serve chilled.

- Cookies soften as they absorb moisture.
