Description

A no-bake dessert with layers of spiced gingersnap cookies and sweet apple filling, chilled to perfection.


Ingredients

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 cups diced apples (peeled and cored)
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 24 gingersnap cookies

Instructions

  1. In a bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Set aside.
  2. In a saucepan, combine apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 10 minutes, stirring occasionally. Let cool completely.
  3. Line an 8×8 dish with a layer of gingersnap cookies. Spread half of the apple mixture over the cookies. Spread half of the whipped cream over the apples.
  4. Repeat layers: remaining cookies, remaining apples, and remaining whipped cream.
  5. Cover and refrigerate for at least 6 hours or overnight.
  6. Serve chilled.
