Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy.
- Add pumpkin puree and vanilla extract. Mix until combined.
- In a separate bowl, whisk together gluten-free flour, pumpkin pie spice, and salt.
- Gradually add dry ingredients to wet mixture. Stir until a soft dough forms.
- Shape dough into 1-inch balls. Place on prepared baking sheet, spacing 2 inches apart.
- Bake for 12-14 minutes, until edges are lightly golden.
- Let cookies cool on baking sheet for 5 minutes, then roll in powdered sugar while still warm.
- Cool completely on a wire rack. Roll in powdered sugar again before serving.
