Description

These gluten-free pumpkin truffles are a no-bake dessert. They combine pumpkin puree, cream cheese, and gluten-free cookies. Roll them in cinnamon sugar for a sweet treat.


Ingredients

  • 1/2 cup pumpkin puree
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cinnamon sugar (for rolling)

Instructions

  1. Mix wafer crumbs, pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla extract in a bowl until combined.
  2. Chill the mixture in the refrigerator for 30 minutes.
  3. Shape into 1-inch balls.
  4. Roll each ball in cinnamon sugar.
