Ingredients

- 1 lb ground beef
- 1 tbsp olive oil
- 1/2 onion, diced
- 1 clove garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 large eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 4 large flour tortillas
Instructions
- Heat olive oil in a skillet over medium heat. Add onion and garlic, cook until soft.
- Add ground beef, cook until browned. Drain excess fat.
- Stir in chili powder, cumin, salt, and pepper. Set aside.
- In a bowl, whisk eggs with milk. Scramble in a nonstick pan over low heat.
- Warm tortillas in a dry pan or microwave.
- Divide beef, scrambled eggs, cheese, and salsa among tortillas.
- Fold in sides, roll tightly. Serve immediately.

- Use low-fat cheese to reduce calories.
- Add diced bell peppers or jalapenos for extra flavor.
