Description

A hearty ground beef pot pie topped with fluffy biscuits. Perfect for a cozy dinner.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 can (16.3 oz) refrigerated biscuits
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add onion and garlic. Cook until softened, about 3 minutes.
  4. Stir in flour. Cook for 1 minute.
  5. Add beef broth and milk. Stir until thickened.
  6. Mix in frozen vegetables, thyme, salt, and pepper. Simmer for 5 minutes.
  7. Pour the mixture into a 9-inch pie dish or baking dish.
  8. Arrange biscuits on top of the filling. Brush with melted butter.
  9. Bake for 20-25 minutes until biscuits are golden and filling is bubbly.
  10. Let cool for 5 minutes before serving.

Notes

  • Leftovers keep in the fridge for up to 3 days.
  • Reheat in the oven at 350°F for 10 minutes.
  • You can use homemade biscuit dough instead of canned.
