- 1 scoop vanilla or unflavored protein powder
- 1/2 cup oat flour
- 1 large egg
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 cup milk (any kind)
- Optional: 1 tablespoon maple syrup or honey
Instructions
- Mix oat flour, protein powder, baking powder, and cinnamon in a bowl.
- In another bowl, whisk together pumpkin puree, egg, and milk.
- Pour the wet ingredients into the dry ingredients. Stir until just combined.
- Heat a non-stick pan over medium heat. Lightly grease with oil or butter.
- Scoop about 1/4 cup of batter for each pancake. Cook for 2-3 minutes until bubbles form on the surface.
- Flip and cook for another 1-2 minutes until golden brown.
- Serve warm with your favorite toppings.
Notes
- You can use gluten-free oat flour for a gluten-free option.
- Add a pinch of nutmeg or ginger for extra flavor.
- Store leftovers in the fridge for up to 3 days.
