Description

A rich and moist chocolate cake layered with a creamy peanut butter filling and topped with chocolate ganache. This dessert is a crowd-pleaser for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until smooth. Batter will be thin.
  5. Pour batter into prepared pans. Bake 30-35 minutes until a toothpick comes clean.
  6. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. For filling, beat peanut butter and butter until smooth. Gradually add powdered sugar and 2 tablespoons of milk until fluffy.
  8. For ganache, heat heavy cream in a small saucepan until simmering. Pour over chocolate chips and stir until melted.
  9. Place one cake layer on a plate. Spread peanut butter filling on top. Place second layer on top. Pour ganache over cake, letting it drip down sides.
  10. Refrigerate 30 minutes before serving to set ganache.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • For a thinner ganache, add extra cream. For thicker, let it cool longer.
  • You can substitute peanut butter with Nutella or caramel sauce.
