A moist and tender honey tea cake loaf, perfect for afternoon tea.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup honey
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter and honey until light and fluffy.
  4. Add eggs one at a time, beating well after each. Stir in vanilla.
  5. Add the flour mixture in three parts, alternating with milk, starting and ending with flour. Mix until just combined.
  6. Pour batter into the prepared pan. Smooth the top.
  7. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use a mild honey like clover or orange blossom for best flavor.
  • Let the cake cool completely before slicing to avoid crumbling.
