Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 3 cups apples, peeled, cored, and diced (about 3 medium apples)
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, mix flour, 1 cup sugar, baking powder, salt, and cinnamon.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk together the egg, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry mixture and stir until just combined. Do not overmix.
  6. Toss the diced apples with lemon juice. Fold them into the batter gently.
  7. Spread the batter evenly in the prepared pan. Sprinkle the top with 2 tablespoons sugar.
  8. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
