These Jack-O’-Lantern Sandwich Cookies are fun Halloween treats. You fill pumpkin-shaped cookies with orange buttercream. They are easy to make and perfect for parties.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened (for filling)
- 2 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- Orange food coloring
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream 1 cup butter and granulated sugar until light and fluffy.
- Beat in the egg and 1 teaspoon vanilla extract.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the butter mixture. Mix until combined.
- Roll dough on a floured surface to 1/4-inch thickness. Use a pumpkin-shaped cookie cutter to cut out shapes.
- Place cookies 2 inches apart on prepared baking sheets. Bake for 8 to 10 minutes, until edges are lightly golden. Cool completely on wire racks.
- For the filling, beat 1/2 cup butter until creamy. Gradually add powdered sugar, milk, and 1 teaspoon vanilla extract. Beat until smooth. Add orange food coloring until desired color.
- Spread filling on the flat side of one cookie. Top with another cookie to make a sandwich. Repeat for all cookies.
Notes
- Chill the dough for 30 minutes if it is too soft to roll.
- Use a small offset spatula for easy filling spreading.
- Store cookies in an airtight container for up to 3 days.
