A quick and easy way to use leftover roast beef by turning it into a hearty hash.
Ingredients

- 2 cups leftover roast beef, chopped
- 2 large potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 eggs (optional)
Instructions
- Heat oil in a large skillet over medium heat.
- Add potatoes and cook until golden brown, about 10 minutes.
- Stir in onion and bell pepper, cook for 5 minutes.
- Add chopped roast beef, salt, black pepper, and paprika.
- Cook for another 5 minutes until heated through.
- Optional: Make wells in the hash and crack eggs into them. Cover and cook until eggs are set.
- Serve hot.

- Use leftover roast beef for best results.
- Adjust seasoning to taste.
- Add other vegetables like carrots or mushrooms if desired.
