Ingredients

  • 8 oz (225g) pasta of your choice
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, zested and juiced
  • 1/4 cup (60ml) pasta water
  • Salt and pepper to taste
  • 1/4 cup (25g) grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
  2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
  3. Add lemon zest and juice to the pan. Stir well.
  4. Toss cooked pasta into the pan with the garlic and lemon mixture. Add reserved pasta water as needed to create a light sauce.
  5. Season with salt and pepper. Stir in Parmesan cheese until well combined.
  6. Garnish with fresh parsley before serving.
