Description
This is a one-pan meal with chicken, potatoes, and feta cheese. Lemon adds a bright flavor. It is easy to prepare for a weeknight dinner.

- 4 chicken thighs (bone-in, skin-on)
- 1.5 pounds baby potatoes, halved
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Add chicken thighs and potatoes to the bowl. Toss to coat evenly.
- Arrange chicken and potatoes in a single layer on a baking sheet.
- Bake for 40-45 minutes, until chicken is cooked through and potatoes are tender.
- Sprinkle feta cheese over the dish. Bake for 5 more minutes.
- Garnish with parsley before serving.
Notes
- You can swap chicken thighs for chicken breasts. Adjust cooking time as needed.
- Add a pinch of red pepper flakes for some heat.
