- 1 cup dried green or brown lentils, rinsed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- 2 cups water
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in garlic, cumin, and turmeric. Cook for 1 minute.
- Add lentils, vegetable broth, water, and diced tomatoes. Bring to a boil.
- Reduce heat and simmer for 25-30 minutes, until lentils are tender.
- Season with salt and pepper. Stir in lemon juice.
- Serve hot, garnished with fresh parsley.
Notes
- You can use red lentils for a creamier texture.
- Add more broth if you prefer a thinner soup.
- Store leftovers in the fridge for up to 4 days.
