Description

A crisp salad with maple-glazed chicken, fresh apples, and toasted pecans.


Ingredients

Scale
  • 2 boneless skinless chicken breasts (about 1 lb)
  • 3 tbsp pure maple syrup
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 cups mixed salad greens
  • 1 large apple (Honeycrisp or Gala), thinly sliced
  • 1/2 cup toasted pecans
  • 1/4 cup crumbled feta cheese (optional)
  • For the dressing: 3 tbsp olive oil, 2 tbsp apple cider vinegar, 1 tbsp maple syrup, 1 tsp Dijon mustard, pinch salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk maple syrup, olive oil, mustard, salt, and pepper. Brush mixture over chicken breasts.
  3. Place chicken on a lined baking sheet. Bake for 20 minutes or until internal temperature reaches 165°F (74°C). Let cool, then slice.
  4. While chicken cooks, make dressing: whisk olive oil, vinegar, maple syrup, mustard, salt, and pepper in a bowl.
  5. In a large bowl, combine salad greens, apple slices, and toasted pecans. Add sliced chicken and feta if using.
  6. Pour dressing over salad and toss gently. Serve immediately.

Notes

  • Toast pecans in a dry skillet over medium heat for 3-4 minutes until fragrant.
  • Use a crisp apple variety to add crunch.
  • For a dairy-free version, omit feta cheese.
