- 2 pounds sweet potatoes, peeled and cubed
- 1/4 cup mascarpone cheese
- 2 tablespoons maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
Instructions
- Place sweet potatoes in a large pot and cover with water.
- Bring to a boil over high heat.
- Reduce heat to medium and cook until tender, about 15 minutes.
- Drain sweet potatoes and return to the pot.
- Add mascarpone cheese, maple syrup, salt, pepper, and butter.
- Mash with a potato masher or use a hand mixer until smooth.
- Serve warm.

- You can use heavy cream instead of mascarpone for a lighter texture.
