Description

Creamy sweet potatoes blended with maple syrup and mascarpone cheese create a smooth, rich side dish.


Ingredients

Scale
  • 2 pounds sweet potatoes, peeled and cubed
  • 1/4 cup mascarpone cheese
  • 2 tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Place sweet potatoes in a large pot and cover with water.
  2. Bring to a boil over high heat.
  3. Reduce heat to medium and cook until tender, about 15 minutes.
  4. Drain sweet potatoes and return to the pot.
  5. Add mascarpone cheese, maple syrup, salt, pepper, and butter.
  6. Mash with a potato masher or use a hand mixer until smooth.
  7. Serve warm.
