Description

Chicken breasts coated with a crunchy pecan and maple syrup mixture, then baked until golden.


Ingredients

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 1/2 cup maple syrup
  • 1 cup finely chopped pecans
  • 1/2 cup gluten free breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil (for greasing pan)

Instructions

  1. Preheat oven to 375°F. Grease a baking dish with olive oil.
  2. In a shallow bowl, mix pecans, breadcrumbs, salt, and pepper.
  3. Dip each chicken breast into maple syrup, coating both sides.
  4. Press the syrup-coated chicken into the pecan mixture, covering evenly.
  5. Place chicken in the prepared baking dish.
  6. Bake for 20 minutes or until chicken reaches 165°F internal temperature.
  7. Let rest for 5 minutes before serving.

Notes

  • For extra crunch, toast pecans before chopping.
  • Use gluten free panko if breadcrumbs are not available.
  • Leftover chicken keeps in the fridge for 3 days.
