- 4 boneless skinless chicken breasts (about 6 oz each)
- 1/2 cup maple syrup
- 1 cup finely chopped pecans
- 1/2 cup gluten free breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil (for greasing pan)
Instructions
- Preheat oven to 375°F. Grease a baking dish with olive oil.
- In a shallow bowl, mix pecans, breadcrumbs, salt, and pepper.
- Dip each chicken breast into maple syrup, coating both sides.
- Press the syrup-coated chicken into the pecan mixture, covering evenly.
- Place chicken in the prepared baking dish.
- Bake for 20 minutes or until chicken reaches 165°F internal temperature.
- Let rest for 5 minutes before serving.
Notes
- For extra crunch, toast pecans before chopping.
- Use gluten free panko if breadcrumbs are not available.
- Leftover chicken keeps in the fridge for 3 days.
