Description
A hearty Mediterranean pasta bake with fresh vegetables, herbs, and cheese.
Ingredients

- 12 oz penne pasta
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta according to package instructions, then drain.
- Heat olive oil in a pan. Sauté onion and garlic until soft.
- Add bell pepper, zucchini, and cherry tomatoes. Cook for 5 minutes.
- Stir in oregano, basil, salt, and black pepper.
- Combine cooked pasta with vegetables in a baking dish.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 20 minutes or until cheese melts and turns golden.
Notes
- You can add olives or feta cheese for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
