Description

A hearty Mediterranean pasta bake with fresh vegetables, herbs, and cheese.


Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions, then drain.
  3. Heat olive oil in a pan. Sauté onion and garlic until soft.
  4. Add bell pepper, zucchini, and cherry tomatoes. Cook for 5 minutes.
  5. Stir in oregano, basil, salt, and black pepper.
  6. Combine cooked pasta with vegetables in a baking dish.
  7. Sprinkle mozzarella and Parmesan cheese on top.
  8. Bake for 20 minutes or until cheese melts and turns golden.

Notes

  • You can add olives or feta cheese for extra flavor.
