- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 sheet puff pastry, thawed
- 1 egg, beaten
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix spinach, feta cheese, olive oil, and black pepper.
- Cut the puff pastry into 12 squares. Place a small spoonful of the filling in the center of each square.
- Fold each square diagonally to form a triangle. Press edges with a fork to seal. Brush tops with beaten egg.
- Bake for 12-15 minutes until golden brown. Let cool before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 2 days.
- Reheat in a 350°F oven for 5 minutes to restore crispness.
