Description
This melting cauliflower recipe makes a tender, flavorful side dish. You roast cauliflower until it’s golden and soft. A light cheese sauce adds richness.

- 1 large head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
Instructions
- Preheat your oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet.
- Roast for 25 minutes, stirring halfway through.
- While roasting, melt butter in a small saucepan over medium heat.
- Whisk in flour and cook for 1 minute.
- Gradually stir in milk. Cook until thickened, about 2 minutes.
- Remove from heat and stir in cheddar cheese until melted.
- Pour cheese sauce over roasted cauliflower. Serve hot.
Notes
- You can use any melty cheese like mozzarella or gouda.
- For extra crispiness, broil the cauliflower for 2 minutes after adding sauce.
