Description
Mini chicken quesadillas are a quick and tasty appetizer. You make them with shredded chicken, cheese, and tortillas. They cook in minutes on the stovetop.

- 2 cups shredded cooked chicken
- 1 cup shredded cheddar cheese
- 4 small flour tortillas (6 inch)
- 2 tablespoons butter
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Mix shredded chicken with cumin, chili powder, salt, and pepper.
- Place tortillas on a flat surface. Spread chicken mixture on half of each tortilla.
- Sprinkle cheese over the chicken. Fold the other half of the tortilla over to form a half-moon.
- Melt butter in a skillet over medium heat. Cook quesadillas for 2 minutes per side until golden and cheese melts.
- Cut each quesadilla into three wedges. Serve warm.
Notes
- Use leftover rotisserie chicken for faster prep.
- Serve with salsa, sour cream, or guacamole.
- You can swap cheddar for Monterey Jack or pepper jack.
