Ingredients

- 2 cups sliced mushrooms
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 4 flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup chopped cilantro
Instructions
- Heat olive oil in a pan over medium heat.
- Add mushrooms, salt, pepper, and garlic powder. Sauté for 5 minutes until tender.
- Place tortillas on a flat surface. Sprinkle cheese evenly on half of each tortilla.
- Divide mushrooms among tortillas, placing them on top of the cheese.
- Sprinkle cilantro over the mushrooms.
- Fold tortillas in half.
- Cook in a dry skillet over medium heat for 2 minutes per side until golden and crispy.
- Cut into wedges and serve hot.
Notes
- Use any mushroom variety you prefer.
- Add diced onions or bell peppers for extra flavor.
- Serve with salsa or sour cream.
