Description

A creamy and flavorful mushroom stroganoff that’s perfect for a quick and satisfying meal.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 500g mushrooms, sliced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 cup vegetable broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add mushrooms, paprika, and thyme. Cook until mushrooms release their liquid.
  4. Pour in vegetable broth and simmer for 5 minutes.
  5. Stir in sour cream and mustard. Cook for 2 more minutes.
  6. Season with salt and pepper.
  7. Garnish with fresh parsley before serving.

Notes

  • Use any type of mushrooms you prefer.
  • Replace sour cream with Greek yogurt for a lighter version.
  • Serve over pasta, rice, or mashed potatoes.
