Ingredients

- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 500g mushrooms, sliced
- 1 tsp paprika
- 1 tsp dried thyme
- 1 cup vegetable broth
- 1 cup sour cream
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add mushrooms, paprika, and thyme. Cook until mushrooms release their liquid.
- Pour in vegetable broth and simmer for 5 minutes.
- Stir in sour cream and mustard. Cook for 2 more minutes.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Use any type of mushrooms you prefer.
- Replace sour cream with Greek yogurt for a lighter version.
- Serve over pasta, rice, or mashed potatoes.
