Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup packed brown sugar
  • 1/4 cup melted butter
  • 4 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 8 oz semisweet chocolate, chopped (for coating)
  • 1 tablespoon coconut oil (optional, for smoother coating)

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 2-3 minutes, stirring frequently. Let cool.
  2. In a food processor, combine the cooled pecans, graham cracker crumbs, and brown sugar. Pulse until finely ground.
  3. Add the melted butter, cream cheese, and vanilla extract. Pulse until the mixture comes together and forms a dough.
  4. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for at least 30 minutes.
  5. Melt the chocolate and coconut oil together in a double boiler or microwave in 30-second bursts, stirring until smooth.
  6. Dip each chilled truffle into the melted chocolate, using a fork to coat evenly. Let excess drip off, then return to the baking sheet.
