Description

A one pot Moroccan spiced chicken stew with sweet potato and couscous. Warm spices and tender chicken in a rich tomato broth. Simple to make and full of flavor.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1.5 pounds boneless skinless chicken thighs, cut into chunks
  • 2 large sweet potatoes, peeled and cubed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup couscous
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and spices. Cook for 1 minute until fragrant.
  4. Add chicken pieces. Cook until browned on all sides.
  5. Add sweet potatoes, diced tomatoes, and chicken broth. Stir.
  6. Bring to a boil. Reduce heat and simmer for 20 minutes until potatoes are tender.
  7. Stir in couscous. Remove from heat and cover.
  8. Let stand for 5 minutes until couscous absorbs liquid.
  9. Fluff with a fork. Season with salt and pepper.
  10. Serve hot with cilantro.

Notes

  • Use chicken breast if you prefer less fat.
  • Cut sweet potatoes into even cubes for even cooking.
  • Serve with a side salad for a complete meal.
